Bamboo lies at the heart of Chinese culture. You can see bamboo houses, waterwheels, and all sorts of tableware. It is used for making paper and for scaffolding and can even be made into clothes. Bamboo is also used in Chinese Traditional Medicine for treating infections.
Bamboo is a symbol of longevity in China as it because of its strength and because it is always renewing itself.
But it is also an important food. For pandas and for people!
The pandas eat it raw, but for people, tender, sweet young bamboo shoots are a delicate vegetable which requires no more than simple cooking and a favourite dish combines them with eggs.
Organic hen's eggs are lightly scrambled and mixed with gently stir-fried slices of bamboo shoots. A little salt is added and that's it. A light and simple, but tasty accompaniment to other dishes.
