Yangshuo Delicacy Pomelo Skin with Pork
The pomelo, also know as shaddock, is the largest of the citrus fruits. It is like an overgrown grapefruit and can be as large as a basketball.
It is prized for its fruit and local people become quite expert at digging through the thick, tough skin to reach the ball of fruit buried deep inside.


But the skin is not discarded. It is sometimes dried and kept to be used later. Or it is soaked for a long time to tenderize it, then it is cooked along with pork, vegetables and other flavorings.
Chinese tradition recognizes the Four Great Beauties - four women from classical times famous for their beauty. One of them was Yang Guifei, concubine to the Tang dynasty Emperor, Xuanzong. She was born in Guangxi and this dish is said to have been her favorite.
