Pork Stuffed River Snails

For millennia, the local inhabitants in the countryside around Yangshuo have harvested snails from the rivers and rice paddies, making them an important food source.
One of the more refined specialties of Yangshuo's cuisine is Pork Stuffed River Snails.
The idea of mixing ground pork with a few vegetals, ginger, etc, and using this mixture to stuff various containers is a very traditional cooking method. Stuffed peppers are common and when in season, stuffed zucchini flowers are common
Larger snails are preferred for this dish. The snail meat is extracted and then mixed with finely minced pork, a little vegetable, and mint. They come in a light sauce and are a little spicy.
